The California Wine Festival 2017 hit Orange County, more specifically, Dana Point and we were there. Many people enjoy pairing wine with food and it just makes sense. The mixture of flavors always makes for a great experience if done correctly. At Chelas, we pair wine with Mexican food every day but we had a chance to open that door for even more people during the festival. While the overall festival was a great time for everyone there was more going on for Chelas Mexican Grill at the California Wine Festival 2017.
The California Wine Festival 2017 acted as more than learning opportunity for Chelas and guests; it was a Chelas showcase on a grand scale.
The Chelas Showcase
During the California Wine Festival 2017 we took the opportunity to teach people how to pair wine with Mexican food. But we also accepted the honor with the idea of presenting the world a new Chelas creation, the pork belly taco. Some have called the taco “Karla’s newest creation” and I accept that title with pride. The star of the taco is the pork belly but the tortilla is the co-star.
The tortilla is a sweet potato molasses tortilla, which is where Karla’s creation comes into play. On top of that tortilla are fresh ingredients that are locally sourced. While the taco itself isn’t yet available at Chelas, it will be on Cinco de Mayo, the 5th of May.
Fusion is Coming
Another aspect of the new pork belly taco is a mixture of Asian influence on the taco. This Asian influence is what I like to call a sign of things to come. I’m currently working on creating new tortillas that take cues from other cuisines. These cues will pair nicely with the fresh ingredients that Chelas is known for throughout Orange County. At the California Wine Festival 2017, we had the chance to test the waters and see how people may accept these new creations.

Any restaurateur would tell you, it’s important to get an idea of how people may receive new creations before putting too much work into more. For us, we took the honor of being invited to the California Wine Festival 2017 and used it to do just that. We introduced our new pork belly taco, paired it with wine and gave it to the foodies of Orange County.
Each foodie who tried our new taco was happy to have more. Many people recognized the passion and care that not only went into the taco but into each of the fresh ingredients. Receiving these compliments was truly an amazing experience and has fueled me to venture more into creating new tortillas and tacos for people to enjoy. A toast, to the future of the taco, the future of Chelas Mexican Grill, and to the California Wine Festival 2017 for giving me this amazing opportunity.
